Junte a farinha que antecipadamente misturou o fermento  e o chocolate em pó, e bata mais um pouco. Envolva muito bem, sem bater as  claras batidas em castelo forte. Ponha a massa numa forma grande sem chaminé bem  untada com margarina, e leve a forno quente a cozer cerca de mais ou menos 40  minutos, convém verificar se está cozido.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Recheio&lt;/u&gt;&lt;br /&gt;Bata bem as natas com o açúcar e a baunilha até obter &lt;i&gt;chantilly&lt;/i&gt;.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Calda&lt;/u&gt;&lt;br /&gt;Leve um tachinho ao lume com o açúcar e a água, deixe ferver cerca de 5 minutos.  Retire do lume deixe arrefecer e misture o conhaque. Depois do bolo cozido,  desenforme deixe arrefecer um pouco e, corte o bolo em três discos. Ponha um dos  discos numa forma amovível, regue com um pouco de calda, espalhe o &lt;i&gt;chantilly&lt;/i&gt;  com ajuda de uma espátula sobre a massa, espalhe um pouco de cerejas picadas e  raspas de chocolate. Cubra com o segundo disco, repita o recheio e cubra com o  último disco. Desenforme o bolo, e com ajuda de uma espátula alise o recheio.&lt;br /&gt;Cubra todo o bolo com o restante &lt;i&gt;chantilly&lt;/i&gt;. Massa&lt;br /&gt;Coloque a farinha num recipiente grande ou sobre a bancada da cozinha. Faça um buraco no monte da farinha e coloque nele o fermento e o leite.&lt;br /&gt;Amasse com um pouco da farinha que o rodeia. Faça uma bolinha, dê uns golpes e deixe crescer.&lt;br /&gt;Quando o fermento tiver crescido retire-o do meio da farinha e amasse aí o açúcar, a raspa de limão e a manteiga Amassando muito bem. Junte então o fermento, os ovos um a um sem parar de amassar e o sal.&lt;br /&gt;Vá polvilhando a massa com farinha enquanto amassa até que esta se descole do recipiente ou bancada. Forme uma bola e deixe levedar até que duplique de tamanho.&lt;br /&gt;Divida então em pequenas porções com peso médio de 50 gramas e disponha-as bem separadas umas das outras num tabuleiro ou sobre a bancada polvilhada com farinha.&lt;br /&gt;Deixe levedar bem e crescer novamente. Vá deitando o leite aos poucos na panela com a aletria, que deve estar em lume brando, mexendo sempre.&lt;br /&gt;Junte a manteiga e depois o açúcar.&lt;br /&gt;Bata as gemas e adicione-lhes um pouco de leite. Bata as gemas com 2 chávenas e meia de açúcar, não é necessário bater muito mas só ligar bem. Junte depois a margarina derretida a raspa do limão e o leite e mexa bem. À parte misture a farinha com o fermento. Bata as claras em castelo bem firme e no final, adicione a restante meia chávena de açúcar aos poucos e sem parar de bater. Por fim junte a farinha ao primeiro preparado e, de seguida junte as claras envolvendo bem. Deite na forma alise e leve a cozer em forno moderado cerca de + ou - 45 minutos convém verificar com um palito. Enquanto o bolo está no forno, deite 2 chávenas de açúcar numa caçarola, junte a água e leve ao lume até fazer caramelo claro. Retire do lume e adicione o leite quente. Volte a levar ao lume e deixe ferver até os grânulos do caramelo estarem desfeitos e o caramelo se tornar numa espécie de molho não muito espesso em que o leite fica todo coalhado (é mesmo assim). Quando retirar o bolo do forno pique-o ao de leve com a ponta de uma faca e regue-o com o molho (regue-o dentro da forma) ou pode desenformar e regar depois.
